Matthew Lyons

Sous Chef

 

Matthew joined UMD Dining Services in September 2024, starting in the warehouse before being promoted to Sous Chef in January 2025. With an extensive background in the culinary industry, he previously owned and operated The Smokehouse Restaurant in Paphos, Cyprus. Before that, he served as Executive Chef and General Manager at Zeitgeist Arts Cafe in Duluth, Kitchen Manager at Clearwater Grill, and worked as a line and prep cook at Hell’s Kitchen in Duluth. 

Outside of work, Matthew enjoys playing disc golf, watching sports, and spending time with family and friends. He appreciates the diverse and collaborative environment of UMD Dining. "It’s refreshing to see how all of the staff collaborates, puts pride in their work, and has each other's backs," said Lyons.
